Okay, so it's just one Ichiban eggplant, and it's about the size of a banana.
But the rest of the plants are coming along wonderfully! When it's not so stinkin' hot 'n' humid outside, I'll take some more photos. (Lots of apostrophes ...)
And so, the question of the day: What do I prepare for my family with my lone Ichiban?

wish i could help but i am not good at gardening and i don't do eggplant...check on foodnetwork.com because paula deen has a casserole made with it that looked delish!
Throw a little balsamic vinegar on it along with some EVOO and grill it. Or dice it and throw it in with some chicken and spice to flavor. I LOVE eggplant, but we're still waiting on ours to grow.
Well, definitely not massouka (likely spelled wrong). I found a recipe over the weekend for this great vegetarian Greek casserole, but it requires 4 POUNDS of eggplant. I'm, like, are you kidding??
I suggest an eggplant and mushroom strata. :) No one in your house is allergic to eggs - right? Perfect!
